HOW TO MAKE CHOCOLATE-COVERED PEANUTS

Supplies

Double boiler set up or microwave 

You can buy a double boiler if you like but you set up a saucepan on a stovetop with some water and a glass bowl on top to mimic a double boiler. 

If you don’t use a double boiler a microwave is a great way to melt chocolate quickly. I’m sure you will be told not to do that..but

That’s what I do, and I have had no issues. All you have to do is be careful not to burn chocolate as it can be easily burned in the microwave. But no worries, it can be done!

Spoon

Any average size spoon will work since you are using it to mix and scoop up the chocolate candy mixture.

Cookie sheet or Parchment paper 

Using parchment paper is the best thing you can use when making chocolate-covered peanuts because it is easy to separate the chocolate cluster and store them with the parchment paper itself. 

Measuring spoon & Measuring cup  

This is good to help you have an accuracy of your ingredient but it is not necessary because our recipes are very fluid. Try not to get so hung up on the number of things and have fun making the best chocolate-covered peanuts.

Ingredients 

1 cup Raw Peanuts

Buying raw peanuts are the best type of peanuts to get since they d not have extra unnecessary ingredients added to them. They do not have to be salted but if you have any type of peanuts on hand you can most certainly use them for this recipe. 

1/2 cup Chocolate chips or Chocolate bar 

This recipe all starts with the selection of chocolate you pick, you can play around with all types of rich chocolate. Milk chocolate, white chocolate, semi-sweet chocolate, or rich dark chocolate ships be used. 

 I use best In class sugar-free chocolate chips but you can whatever chocolate chips or bar you have. If you are using a chocolate bar break it up into little pieces so it can melt better.

1 tbsp Coconut oil

Coconut oil is used to help melt your chocolate chips or chocolate bar. I love buying it because it is a good size container of coconut oil for a good price.

Pinch Himalayan pink salt 

Himalayan pink salt brings out the delicious chocolatey taste of the chocolate covered peanuts. Buying bulk of Himalayan pink salt is helpful because I use it for my general cooking recipes. If you don’t have Himalayan pink salt you can use sea salt or whatever salt you have on hand.

Step-by-Step instructions 

  1. Pour 1 cup of peanuts into a bowl
  2. Pour 1/2 cup of chocolate chips into a bowl and add 1 tbsp of coconut oil
  3. Place the chocolate chips and coconut oil in the microwave for 30-40 seconds to melt them. You can also melt the chocolate chips with coconut oil in a double boiler. 
  4. After melting the chocolate add the peanuts to the melted chocolate and mix them up
  5. Use a spoon to scoop up some of your chocolate peanut mixtures and place one scoop at a time on parchment paper or a cookie sheet then sprinkle salt on top
  6. Place the peanut cluster in the freezer for 5 minutes and they should be ready to eat.

Tips for making Chocolate peanut clusters

After your candy has hardened in the freezer you can dip them in chocolate again to give them a double coat of chocolate.

Regardless of how you are melting your chocolate, make sure you stir the chocolate until it is completely smooth leaving no signs or clumps.

How to Store

Homemade chocolate peanuts melt very quickly so storing them in an airtight container in your refrigerator for at least 2 weeks or longer is an option. Make sure the chocolate covered peanuts have a seal to prevent odors from other things in your fridge that can damage your homemade candy.

For long-term storage store, your chocolate covered peanuts in an air-tight container in the freezer for up to 3 months 

If you want to leave your homemade chocolate peanuts out on the counter store them in an air-tight container in a cool dark place. Avoid excessive heat or humid environments as they can not only melt your chocolate but spoil them quickly.
