Step 1 Gather Your Ingredients and Equipment

Before you begin, make sure you have all the necessary ingredients and equipment. You’ll need:

Step 2 Prepare Your Gelatin and pan

In a small bowl, sprinkle the gelatin in water. Let it sit for about 5 minutes to bloom. After you set up your gelatin, go ahead and get the dish pan you will use to pour the final marshmallow mixture so you coat an inch layer of arrowroot powder and place that to the side.

Step 3 Combine Your Sugar and Water

In a medium saucepan, combine the sugar and water. Place the saucepan over medium heat and stir until the sugar has dissolved.

Step 4 Bring the Mixture to a Boil

Increase the heat to medium-high and bring the mixture to a boil. Use a candy thermometer to monitor the temperature to reach 219-220 degrees Fahrenheit.

Step 5: Reach the Soft-Ball Stage

Once the mixture reaches 219-220 degrees Fahrenheit, remove it from the heat. 

Step 6: Whip the Mixture

Carefully pour it into the bowl you initially added the gelatin and water in and mix

( If you are using a stand mixer or a large bowl that doesn’t have the gelatin in it already, just pour the gelatin mixture in your water and sugar mixture to it)

Add the vanilla extract, and honey, after temps are below 100 degrees Fahrenheit,  then beat the mixture on high speed for about 5-7 minutes, or until it has doubled in volume and you are seeing some peaks.

Step 7: Pour the mixture into a Baking Dish

Pour the marshmallow mixture into a 9×13 inch (23x33cm) baking dish or any baking pan coated with arrowroot powder.

Step 8: Let the Marshmallows Set

Let the marshmallows set at room temperature for a couple of minutes. You can use these marshmallows immediately or let them sit in the refrigerator overnight or place them for at least an hour or two. 

Either way, these marshmallows would be good to go in a few minutes.

Step 9: Cut and Dust the Marshmallows

Once the marshmallows have been set, remove them from the baking dish and cut them into desired shapes using a sharp knife or cookie cutter.

  • I’m all about fewer dishes, so I use the same bowl that I’m going to mix my final mixture to use to bloom the gelatin.
  • When you’re finally mixing your marshmallows at the end, make sure to pour them when they are still portable. You can over-mix this very quickly and you will get marshmallows right away, and it will be difficult to pour in a pan as they will be already hard in your bowl.
  • If you have cookie cutters or molds, you can use the different shapes of marshmallows you want. 
  • You can cut these marshmallows small to make mini marshmallows for hot chocolate toppings

How to store Homemade marshmallows

Keeping your homemade marshmallows in an airtight container is key. I placed mine in a glass container. 

Store in the refrigerator to last you between 4 to 5 days. You can also push it to a week, but always be mindful of food, spoil it smell, and look.

I do not freeze these marshmallows as you will not get the same consistency and taste if you freeze them.

These regular marshmallows are so easy to make that you will make them every time you need a fluffy treat for you or your family.

You never have to buy marshmallows at the grocery store again after this recipe. There is no need to buy popular brands like kraft jet-puffed marshmallows.
