Quick White Bean and Shrimp Soup

This quick white bean soup and shrimp soup can be made in 30 minutes!

Looking for a quick, easy, and good wholesome soup that your whole family will enjoy? This Mediterranean-inspired soup only takes 30 minutes to make and is made of simple healthy ingredients.

Our white bean and shrimp soup is full of protein and is a nutritious warm soup you can make all year round.

Ingredients Needed

  • Cannellini beans- You can use dry or canned. I recommend canned because I use the liquid for the soup. If you use dry beans, I would add at least 2 cups of chicken stock to your soup.
  • If you use dry beans, I would add at least 2 cups of chicken stock to your soup.
  • Onion- I have used white, sweet, yellow, and red onion in this recipe. So pick whichever one you prefer!
  • Garlic- Already minced garlic is faster, but by all means, if you have an amazing garlic press like this one then use it!

  • Tomato- Cutting upon any variety of red tomatoes will do!
  • Tomato sauce-Using plain organic tomato sauce or one with a seasoning of your liking are great options. Tomatoes are in the dirty dozen list, so it is always a bonus if you buy or grow organic.
  • Chicken broth-homemade broth is great if have any soup, chicken broth will give this soup great flavor! Add more chicken broth to your soup if needed.
  • 1 lb of shrimp- Any size shrimp will do, and this recipe cooks the shrimp by pouching it for 5-6 minutes. Make sure you check on them every few minutes until the shrimp is opaque all the way through.

How to make White Bean and Shrimp Soup

  1. Heat a large saucepan over medium heat.
  2. Add olive oil, and white onion to the pan and cook until translucent.
  3. Next add in garlic, and cannellini beans with its canned liquid. Sauté for 5 minutes, then add in chicken broth, chopped tomato, tomato sauce, paprika, oregano, salt, and basil, Stir to combine.
  4. Cover. Bring to a boil, reduce heat and simmer for 10-15 minutes.
  5. Lastly, add shrimp and lemon juice to the soup. Stir in shrimp until it is covered in the soup. Cook shrimp for 5-6min.
  6. Add salt to taste, and garnish with chopped pieces of green onion.

Ingredients
  

  • 1 whole chopped onion
  • 1 tbsp minced garlic
  • 30 oz cannellini beans ( 2 cans, use can liquid )
  • 1 cup chicken broth
  • 1 whole chopped tomato
  • 1/2 cup tomato sauce
  • 1 tsp piprika
  • 1 tsp oregano
  • 1/2 tsp basil
  • 1 lbs shrimp
  • 1 tbsp lemon juice
  • salt Add salt to taste

Instructions
 

  • Heat a large saucepan over medium heat.
