1 &1/2cups Blueberries or half blueberries & strawberries (frozen or fresh)
1tbspLemon Juice
1tbspHoneyuse more if needed, my family likes this amount of honey
1tbspChia Seeds used to thicken the fruit to create a jelly consistency
Instructions
Place fruit, lemon juice and honey in a saucepan on medium heat
Reduce heat if fruit start to boil and let the fruit condense
After the fruit is condensed use an immersion blender to blend the leftover fruit chunks (watch out for splatter, best to use a large saucepan for this purpose)
pour fruit mixture into a glass jar and add in 1 tbsp of chia seeds
Place the top on a glass jar and store in fridge 1-2 hours or overnight to thicken jelly
